What to Eat Wednesday - Enchiladas

This week for What to Eat Wednesday I am making "white girl" enchiladas. I adapted the recipe from one I found on Pinterest. I hesitated calling these "white girl" enchiladas then I realized after making them my Hispanic mother-in-law would definitely say these were not "real" enchiladas. However, they tasted very good and were easy to make.

Ingredients
1/4c Milk
8oz Cream Cheese
1/4-1/2c Mayo
1c Salsa
Bag of Mexican Blend Cheese
2 Cans Shredded Chicken
1 Can Green Chilies
1tbl of Chili Powder
Tortillas
Jalapenos
Sour Cream

 
 
Preheat the oven to 350. Mix the milk, cream cheese, mayo, salsa, a handful of the shredded cheese, and 3/4 of the can of green chilies in a pot and melt all ingredients together. While those ingredients are melting mix the shredded chicken, a handful of the cheese, the chili powder, and the rest of the green chilies in a bowl. When the cheese mixture in melted, add a ladle full to the chicken mixture also.
 
 

When you have everything mixed together add a ladle full of the cheese mixture to the bottom of a greased baking dish.



Next, put some of the chicken mixture in a tortilla roll it up and place in the dish. Keep doing this until the dish is full. Top with the rest of the cheese mixture, the rest of the shredded cheese, and some jalapeno.

 
Bake in the oven for 20 minutes or until everything is melted together.
 
 
You are finished. Serve with sour cream. Let me know if you try it!!

What to Eat Wednesday - Tacos

This weeks What to Eat Wednesday is Tacos. We have tacos as often as once a week in my house. They are an easy go to meal that everyone enjoys. We always have enough leftovers to make a taco pizza a couple of nights later, which I love getting two meals in one.  I hope you enjoy my twist on tacos. Let me know if you try them.

Ingredients
One pack Trader Joes taco seasoning
Taco Shells
Hamburger Meat
Black Beans
Cheese

Extras
Jalapenos
Cilantro
Fresh Salsa (recipe soon)
Jalapeno Dip (recipe soon)
Sour Cream
Lime
Texas Pete

Heat your oven to 450. Then, brown your hamburger meat over medium heat. While the meat is cooking I wash and drain my black beans. When the meat is brown drain off all the grease. A quick tip to drain hamburger is to save your paper bags and use for liners to absorb the grease. Put your hamburger and black beans in the pan with the taco seasoning.

Add about half a cup of water. Let the seasoning, meat, and black beans simmer with the water until it thickens a little. Next, take your taco shells and add the mixture in each one of them. Put however much cheese you want on top of each shell and put them in the oven until the cheese melts (about five minutes).


When the tacos come out they are ready to enjoy! Add what ever extras you want!
